Description / Hobby Basic Maple Syrup Cooker | Wood Fired Evaporator
The Basic Maple syrup evaporator is capable of processing up to 12 gallons of maple syrup per hour. GPH was tested using the unit as it sits without added insulation or sides. Your actual experience may vary based on such things as the type of firewood being used, stoking the firebox, and etc.
The Basic Evaporator is Amish USA made using A36 carbon 3/16” thick steel topped with a 20-gauge USA 304 stainless steel divided pan.
These cookers are very versatile and can also be used for sorghum cooking and heating water for other needs.
We listened to our customers who wanted to cook down maple syrup simply and efficiently without investing in a fancy evaporator. To keep the cost down, we offer the Basic Evaporator as a bare-bones unit allowing the customer to use it as is or to add things like firebrick insulation sides and so forth. The unit was tested without and with insulated sides. The actual GPH was not significantly different. The insulated sides and sheeting did make it more comfortable to work next which, could also be accomplished using cement board laid up on the sides.
The Basic unit comes with the welded firebox cooker and the stainless steel 4-channel pan. No stove pipe, fire brick, or valves are included. The cooker will be unpainted and can be left so or painted with high heat paint after receiving it. The grate is made of ¾” solid steel rods. The cooker uses a standard 8" stove pipe and will take firewood up to 2' long.
The arch is formed by stacking bricks in the back of the firebox to direct the heat up under the pan as it exits the flue pipe.
The Basic Evaporator has a standard 6” tall divided cooking pan. To save labor cost the dividers are spot welded inside the pan, and the actual pan corners are welded. The standard divider pan comes with two ½” threaded valve ports welded on both sides of the front of the pan. This allows you to insert a valve on one side and a pipe plug on the other side. Just swap to reverse the flow or add two valves. Valves and plugs are not included. Use a locally purchased brass ball or stainless valve(s) and plugs.
In most cases, before the maple syrup season begins evaporators will ship within 6-10 weeks. We recommend purchasing early before your season begins. As the season progresses longer wait times are likely.
Evaporators are priced F.O.B. from the Amish shop in Arthur Illinois. You may arrange for pick up or we can have it shipped to most of the maple syrup processing states to a business address for $350 or less. Select either F.O.B. for pickup, a freight quote, or select shipping deposit to apply to the shipping.
Residential delivery and lift gate charges will likely run more, and we will contact you to settle up the difference before it ships.
We will refund you the difference or absorb up to 10% over the actual shipping cost when the shipping deposit is selected.
