Best old-fashioned Amish apple pie

This old-fashioned Amish apple pie is simple, hearty, and made with the kind of ingredients traditionally found in a country kitchen.

Ingredients

For the crust

2½ cups all-purpose flour

1 teaspoon salt

1 tablespoon sugar

1 cup cold butter or shortening

6–8 tablespoons ice water

For the apple filling

6–7 medium apples, peeled, cored, and sliced

¾ cup granulated sugar

¼ cup brown sugar

1 teaspoon ground cinnamon

¼ teaspoon nutmeg

2 tablespoons flour

1 tablespoon lemon juice

2 tablespoons butter

Directions

Prepare the crust: Mix flour, salt, and sugar. Cut in the cold butter until the mixture resembles coarse crumbs. Add ice water, one tablespoon at a time, until the dough comes together.

Divide the dough into two portions. Roll one portion out and place it in a 9-inch pie pan.

Make the filling: Combine the sliced apples, sugars, cinnamon, nutmeg, flour, and lemon juice.

Pour the apple mixture into the crust and dot the top with butter.

Roll out the remaining dough and place it over the apples. Crimp the edges and cut several small vents in the top.

Bake at 425°F for 15 minutes, then reduce the temperature to 350°F and bake another 35–45 minutes, until the crust is golden and the apples are tender.

Let the pie cool for at least 1–2 hours before slicing so the filling can set.

For a particularly old-fashioned flavor, use a mixture of tart and sweet apples rather than just one variety. Serve warm with a scoop of vanilla ice cream—or, in keeping with a simple country kitchen, enjoy it with a little fresh cream poured over the top.
